A great and tasteful combination with tea and nimki. Nimki is crispy, semi-spicy folded, and rolled with ghee and they taste fantastic.
Plain flour: 280 grams
Coldwater: around 100 ml
Salt: 1 teaspoon
Pepper: 2 teaspoon
Melted butter Ghee: 130 ml
Cooking oil for deep frying
Mixed nut crushed
To make Syrup:
120 grams of sugar
How to make Nimki?:
Step 1: Add plain flour into a bowl, pepper, salt, and ghee. Using your palm rub well till you get a breadcrumb-like mixture.
Step 2: Add some cold water, around 100 ml; continue to mix. After a while, the dough will form. Rest the dough for around 10 minutes.
Step 3: While you are waiting, beat some flour and butter until it forms a smooth mix.
Step 4: To make syrup, pour in orange juice and sugar into a small pan and boil it will. At this stage, simmer the mix for around 10-15 minutes. The mix will then turn to a thickened liquid. Take off from the cooker and leave in a place to cool it down.
Step 5: If you require dust some flour on a clean and plain surface. Get your dough on the surface and roll into a quadrilateral with four right angles. Now add some butter and plain flour and then roll the rectangle dough in to a long water pipe shape.
Step 6: Cut the roll into small pieces and take each cut dough on a floured surface. Gently press with your palm to make a little circle. Now, you have to fold the circle in half then fold again from the other side. This brings each dough into a smaller triangle shape raw nimki. Do the same process for the rest of the sliced dough.
Step 7: Deep fry them in a large pan. Please take extra care when frying as hot oil can be very lethal.
Last step: When fried and your fried nimki are cool, dip them in the thick orange syrup.
