This Instant Khaman Dhokla recipe is a steamed cake prepared with chickpea flour and spices. It’s pure comfort food and one of my family’s favourite.

Preparation: 5 minutes plus 10 minutes for resting
Steam: 15 minutes
Serving: 3-4 persons

Semolina/suji: 1/2 cup
Natural yoghurt: 1/2 cup
Green chillies: 3-4 pieces
Onions: 1/4 cup
Fresh coriander: 1/4 cup
Garlic and ginger paste: 1 teaspoon
Turmeric powder: 1/4 teaspoon
Baking soda: 1/4 teaspoon
Cooking oil: 2 tablespoon
Fresh black mustard: 1 teaspoon
Fresh cumin seeds: 1 teaspoon

For the decoration:
Corriander and chilli flakes.

Step One. Add semolina/suji in a bowl, also add sliced onions, finely chopped finger chillies, coriander, garlic and ginger paste, turmeric powder, yoghurt and mix well with a hand whisk. Rest the mixed for 10 minutes.

Step Two. In a saucepan add some cooking oil, when hot add some cumin seeds and fry a little. Now, add this hot mix into the rested dhokla mix. Now, mix the bowl content very well.

Step Three. Add some salt and mix well. Now add baking soda and stir lightly. Take a square mould and pour the mix in it.

Step Four. In a pan add some water and place a stainer. Heat water for a while. Place dhokla mix mould pot. Steam for 15 minutes.

Step Five. You may check using a long steel skew similarly checking cake. Cut them and can be decorated with fresh coriander fresh and chilli fresh. Enjoy!!
