For the chicken marinade-
150 grams boneless chicken
½ teaspoon garlic and ginger paste (one-quarter each)
One-fourth teaspoon chili powder
One-fourth teaspoon cumin seeds powder
One-fourth teaspoon garam masala powder
One-fourth teaspoon salt
One teaspoon soya sauce

For the Shawarma sauce-
Three tablespoons natural yogurt
Three tablespoon mayonnaise
Two tablespoons tomato ketchup
One-fourth teaspoon white pepper powder
Salt to taste
For the pitta bread-
1½ cup plain flour
½ teaspoon baking soda
½ teaspoon salt
One tablespoon sugar
1½ tablespoon cooking oil
For the Shawarma filling-
1 tablespoon cooking oil
For the salad-
Spring onions etc

Step one. Take boneless chicken in a bowl, garlic ginger paste to marinate, chili powder (depending on your taste you can adjust chilies), cumin seeds powder, garam masala powder, salt and mix well. Rest for 15 minutes.

Step two. In a small bowl take natural yogurt, mayonnaise, ketchup, white pepper powder, salt, and mix well.

Step three. In a large bowl take some flour, baking soda, salt, sugar, cooking oil, and mix well; then add some normal temperature water but add slowly and make a medium consistency typed dough. We need a medium dough, not too thick or not too runny. Using a soaked tissue rest for 30 minutes.

Step four. In a saucepan add cooking oil, light heat it up. Now, pour in the marinated chicken. Fry for 4-5 minutes in a low to medium heat once done cool them down.

Step five. Following dough resting for half an hour, we must take them out from the bowl, sift some flour on a plain surface. Cut them into pieces, I cut into three slices and make a chapati shaped roti. This doesn’t need too thin like chapati, require a little thicker but not too thick. In a frying pan, we will cook our pita bread. Our aim is not to burn like chapati but we need to achieve two to three burning spots to have appeared.

Step six. This is the final part, place pita bread on a surface, spread shawarma sauce all over, then take a couple of lettuce leaves on it. Add our fried chicken, sauce again on the top. You can have any type of salad you like, such as tomatoes, cucumber, pepper, etc. Once all added, fold, and enjoy!
